Tangy Kale Salad with Hemp Seeds

Not sure how to prepare Kale? Look no further! My favorite Kale salad here.

So you’ve heard all the hype about Kale and all it’s superfood qualities, but not sure what to do with it? This is my all.time.favorite.

 

 

Kale Salad recipe.

Prep time: 10 minutes

Total time: 10 minutes

Serves 2-4

Ingredients:

  • 1 large bunch organic green kale, washed, stemmed and squished (really, see below)
  • 2 tablespoons raw hemp seeds
  • Dressing (see below)

Dressing:

  • 1 large garlic clove, pressed or grated
  • 3 tablespoons raw tahini paste
  • 2 tablespoons raw apple cider vinegar
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons organic tamari (wheat-free soy sauce)
  • 1/2 teaspoon toasted sesame seed oil

Recipe:

Its best to use fresh kale (not bagged) so you can remove the stems as the stems get chewy and bitter tasting. Start at the bottom of the stem and gently slide your fingers up the stem separating the leaves.

Break the leaves in to bite-size pieces and put in to a bowl. Add the lemon juice and and salt. With clean hands, message the kale (squish it really good!) for several minutes. This will actually break down the leaves so they are not so chewy. They become almost wilted looking and less in volume. Its all good, you are doing it right.

Stir in the dressing and hemp seeds. Enjoy!
